I have a wonderful treat for y'all to try. My son wanted me to teach him some about cooking and this is what we decided to make. I will post the recipe then the pictures of how it looked when all done and ready to eat.
Chocolate Marshmallow Fudge
Ingredients:
1 spray cooking spray
1 3/4 cups sugar, white
3/4 cup milk, evaporated, fat free
2 Tbsp Margarine, reduced-calorie, or light butter
12 oz chocolate, semisweet, chips (about 1 1/2 cups)
14 large Marshmallows
Instructions:
Coat an 8x8 inch pan with cooking spray. In a medium saucepan, stir together sugar, evaporated milk and margarine (or butter); bring to a boil over high heat. Reduce heat to medium-low and cook, stirring constantly, about three minutes.
Stir in chocolate and marshmallows; remove pan from heat and stir until smooth.
Pour mixture into prepared pan and refrigerate until firm, about 2 hours. Cut into 36, 1 1/3 inch squares and serve.
*** Store in refrigerator or for firmer consistency freeze. Yields 1 piece per serving. It is VERY rich tasting so be easy on just grabbing pieces. Those following Weight Watchers this is 3 Points Plus Value.
